Breadmaker Calzone Dough

I love my bread maker for making dough.  Honestly, I have never made a yeast bread or dough without my bread machine.  It just seems so tedious to mix the ingredients, let it rise, punch it down, knead it, etc, etc, etc.  Why do all that work when a machine will do it for you?!?  One of my favorite types of dough to make is for calzones.  My kids like them a lot more than pizza.  Here's the recipe I use that came with my Sunbeam bread maker.  Just keep in mind that the bread making process takes about 2 hours plus time for baking, so don't start this at 5:00 expecting to have calzones on the table by 6:00...trust me...I know from experience!

Calzone Dough
*makes enough dough for 5 large calzones

1 c water
1 tbsp olive oil
2 1/2 c bread flour
1 tsp sugar
1 tsp salt
2 1/4 tsp (or 1 yeast packet) fast rising yeast

Combine all ingredients in bread maker pan in the order listed and select dough cycle.

Once dough cycle is complete, cut the dough into 5 equal pieces and roll out into a circle on a lightly floured surface.  Fill with desired filling to within 1" of the edge.  Fold over the dough and pinch the edges closed.  Place on a greased cookie sheet and use a pastry brush to brush 1 beaten egg over the tops of the filled calzones.  Bake in a 375 degree oven for 25 - 30 mins.

  2. Hmmmm...that's a tough one because honestly I use calzones to use up leftovers a lot of time. I will use leftover shredded BBQ pork or leftover baked chicken. I guess if I was going to make my ultimate calzone it would probably be lots of veggies! Mushrooms, red & green peppers, black olives, lots of cheese and just a little sauce.
